Yummy clean oatmeal chocolate chip cookies!! Mostly. I have not yet found a clean solution for chocolate chips that fits in my budget, so I try to take it easy on them.
1 ripe banana (the more ripe, the sweeter)
1 T. maple syrup
Pinch of salt
1 cup old fashioned oats
2 T. mini-chocolate chips (optional)
Mash up the banana, salt, and maple syrup with a fork. Stir in the oats & chocolate chips. Scoop by spoonfuls (I use a cookie scoop) onto a baking sheet lined with parchment paper or foil. Four a more traditional oatmeal cookie look, flatten the cookies slightly before baking.
Bake at 350 degrees for about 9 minutes or until just beginning to brown.
I like to bake them in my toaster oven in the morning and snack on them during the day.
Calories with mini-chips (Kroger brand): about 63 per cookie.
Calories without mini-chips: about 47 per cookie
